Ingredients

•  1/4 cup/60 mL butter or margarine, softened
• 3/4 cup/180 mL sugar
• 1/4 cup/60 mL dark molasses
• 1 egg
• 1 tsp/5 mL Original Double-Strength Vanilla
•  1/2 tsp/2.5 mL Butter Extract
• 1-3/4 cups/425 mL all-purpose flour
• 1/2 tsp/2.5 mL baking soda
• 1/4 tsp/1.2 mL salt
• 1 cup/250 mL rolled oats
• 1-1/2 tsp/7.5 mL Pumpkin Pie Spice
• Cooking Spray

Cooking Directions

Preheat oven to 350ºF/180ºC. Mix together butter and sugar in large bowl until well mixed. Add molasses, egg and extracts; mix well. Combine remaining ingredients and add to molasses mixture; mix well. Drop by tablespoonfuls 2 inches/5 cm apart on cookie sheet sprayed with Watkins Cooking Spray. Bake for 10 minutes or until lightly browned. Cool slightly on cookie sheet then remove to wire rack and cool completely.

 Ingredients

•  2 cups/500 mL whipping cream
• 1 cup/250 mL granulated sugar
• 1/2 cup/125 mL light corn syrup
• 2 tsp/10 mL butter or margarine
•  1 tsp/5 mL Caramel Extract
• 1 tsp/5 mL Original Double-Strength Vanilla
• 1/3 cup/80 mL chopped walnuts

 Cooking Directions

 Combine cream, sugar, syrup and butter in large heavy saucepan. Using a candy thermometer, heat to 245°F/125°C, stirring constantly. Remove from heat at once. Stir in extracts; pour into buttered 8 x 8 x 2-inch/20 x 20 x 5-cm pan. Cool just until firm. Loosen candy around edges with a knife; invert on cutting surface. Cut into 1-inch/25-mm squares with a sharp knife. Cool completely and wrap each in waxed paper. Store in a cool place.

Note: These caramels keep well, and may be made several weeks in advance.

Apple-Red Pepper Jelly

Ingredients

2 cups/500 mL water 1 can (6 oz/170 g) frozen apple juice concentrate, thawed 1 package (1-3/4 oz/50 g) powdered fruit pectin 3-3/4 cups/900 mL sugar 1 to 1-1/2 tbsp/15 to 22 mL (depending on heat desired) Red Pepper Flakes 1/8 tsp/0.6 mL red food coloring

Cooking Directions

In 3-quart/3-litre saucepan, combine water, apple juice concentrate and pectin; stir until dissolved. Bring to a boil, stirring constantly. Add sugar and red pepper flakes. Heat to a full rolling boil, stirring constantly. Remove from heat and strain through a fine mesh sieve or cheesecloth. Stir in red food coloring. Let stand 5 minutes; skim off any foam. Pour into hot sterilized jars, glasses or freezer containers. Cover tightly; cool. Store in refrigerator.Makes 4 cups/1 litre, 1 tbsp/15 mL per serving.Directions to give with jelly: Keep refrigerated for no longer than 4 weeks, or can be frozen for up to 2 months. Use as a glaze or accompaniment with roast pork, chicken or ham.
